Suz’s Old Fashioned Baked Beans
We’re so used to eating tinned baked beans and thinking of them as ‘boring’, that this recipe might surprise you. Not only is it pretty easy to make excellent, tasty baked beans, but they will not have all the extra sugar and salt that is necessary for a commercial product. The texture of real beans isn’t as mealy or mushy as the tinned version either, so it’s much more satisfying! The key ingredient for a good result is time. So whether you use the oven or a slow cooker, don’t rush the end result.
Ingredients
2 cups small white beans or navy beans
1 large onion, diced
1-2 clove garlic, finely chopped
1/2 cup ketchup
1/8-1/4 cup brown sugar
1/8 cup worcestershire sauce
1/8 cup balsamic vinegar
1/2 T prepared mustard (or favorite grainy mustard)
1/2 T salt
1 t. liquid smoke
1 t. hot sauce
Optional: 1/2 T: either italian or greek seasoning
Instructions
Soak over night or by quick soak method: 2 cups small white beans or navy beans
Quick Soak Method:Rinse beans and place in med-large pot
Cover by 1 inch with cold water and bring to boil for 2 minutes
Cover pot and remove from heat for 1 hour.
Drain water from beans
*Do Not Use Soaking Water for Cooking*
Place the drained beans in the slow cooker or in a large oven-safe casserole dish that has a lid.
Add and stir well:
1 large onion, diced
garlic, chopped
1/2 cup ketchup
1/8-1/4 cup brown sugar
1/8 cup worcestershire sauce
1/8 cup balsamic vinegar
1/2 T prepared mustard (or favorite grainy mustard),
1/2 T salt
1 t. liquid smoke
1 t. hot sauce
[Optional: 1/2 T: either italian or greek seasoning]
Add enough fresh water to make sure the sauce covers the beans.
Slow Cooker Method: Cover and cook on low for 10-12 hours until done. Stir occasionally and add water if required.
Oven Method: Cover and place casserole in a larger high sided pan. Add hot water to the pan to the level of the beans in the casserole.
Place in the oven at 350 degrees for approx. 1 hour to heat through.
Reduce oven heat to slow cook:
For regular baked beans: 300 degrees for 4-6 hours
For deep browned beans: 200 degrees for 10-12 hours
* Check periodically to refill the pan with water if it gets too low. *
Stir occasionally and add water to beans if required to keep moist.
Taste near end of cooking time to adjust seasonings to taste.
