Suz’s Marinated Coleslaw (GF)

This isn’t a creamy coleslaw, but an old fashioned oil & vinegar ‘marinated’ type. It keeps well, is refreshing and goes great with just about everything! And best of all, it is SO simple.

1/2 bag coleslaw mix (in the produce section of the grocery store)
1-2 green onions, chopped OR 1/4 cup red onion, chopped
Mix together dressing and add to coleslaw:
1/4 cup red wine vinegar (white vinegar will do as well)
1/8 cup (2 Tbsp) white sugar (make sure sugar is dissolved in vinegar before adding oil)
1/4 cup canola oil
salt & pepper to taste (about 1/4 – 1/2 tsp)
I like to add some chopped fresh parsley or chives, when these are available, but it’s not required.

It’s good right away if you like your coleslaw ‘crispy’, but is better after it sits a little. If you can, make it 30 min or 1 hr before you need it. This coleslaw keeps tightly covered for at least a week and will get progressively less crisp and more marinated. You can continue to stir in fresh coleslaw as you use it up to keep it fresher, longer.
