Suz’s Gluten Free Baked Glazed Donuts
I was feeling homesick for a Tim Horton’s maple glazed donut. So that inspired a gluten free donut version that hit the mark! There are many variations you can make from this. Here’s the basic GF baked donut recipe and glaze. Feel free to experiment from here!
Note: to make these, you will need a donut baking pan. If you can’t find this in a local housewares store, you can order online. Well worth getting one!
Ingredients
1 C All purpose GL flour blend (I use Bob’s Red Mill 1:1)
1/3 C tapioca starch
1/3 C sugar
1 t baking powder
1/2 t salt
1 egg
1/3 – 1/2 C milk (optional: buttermilk, yogurt)
1 t vanilla extract
1/4 C melted butter (or oil)
1 donut baking pan – 6 count
Vanilla Glaze Ingredients:
2 T soft butter
2 T milk
1/2 t vanilla extract
1 C powdered sugar
Maple Glaze Ingredients:
2 T soft butter
2 T maple syrup
1/2 t maple extract
1 C powdered sugar
Instructions
Mix wet ingredients together in measuring cup or small bowl: egg, milk, extract, butter
Combine dry ingredients in medium bowl: flours, sugar, baking powder, salt.
Add wet ingredients to dry and stir well to combine without lumps.
Spray lightly or butter donut pan forms.
Spoon batter into each form, being careful not to overfill. Do not go above the height of the middle ‘hole’.
Bake at 400F for 8-10 minutes. Carefully remove when done and cool donuts on rack for 5 minutes before icing.
While donuts are baking, prepare your glaze of choice. I have provided both vanilla and maple as starting points. You can make other flavours by substituting ingredients: for example, lemon juice for milk, or using almond extract instead of vanilla or maple.
Mix glaze ingredients together in a bowl until smooth. Adjust amount of powdered sugar to the consistency you want for the icing.
Carefully, dip the top of each warm donut in the glaze, and place back on wire rack to cool and set.
