Suz’s Cheesy Corn Biscuits

I couldn’t decide whether to make cheese biscuits or cornbread the other day, so I went with both.  Turned out pretty good too!

Ingredients

1 C flour
1/2 C corn meal
2 t baking powder
2 t sugar
1/2 t baking soda
1/2 t salt
1/2 c margarine, butter or shortening
3/4 C buttermilk or milk OR
1/2 C sour cream or yogurt (or combination)
1/4 C milk or water
1/2 C grated mixed cheeses

Instructions

Pre-heat oven to 350F.  Lightly grease baking pan/sheet or line with parchment paper.

Mix together:
1 C flour
1/2 C corn meal
2 t baking powder
2 t sugar
1/2 t baking soda
1/2 t salt

Cut in (using food processor or by hand):
1/2 c margarine, butter or shortening

Stir together & add to mixture:
3/4 C buttermilk or milk
OR
1/2 C sour cream or yogurt (or combination)
1/4 C milk or water
Note:  adjust liquids as needed, depending on flour and humidity.  Consistency of dough should be soft but not too sticky – firm enough to shape by hand.

Stir in 1/2 C grated mixed cheeses
Let dough rest 5 minutes.

Scoop out 1/3 C portions, shape loosely into rolls  and place on greased baking pan or baking sheet.
Bake for 20-25 min @ 350F.   Let sit for 5-10 minutes after removing from oven before serving.
