Who doesn’t love donuts? Making them at home is a different thing though. Deep frying is not something we do. Baking, on the other hand, makes so much more sense. I never tried baked donuts until I stumbled across a donut baking pan in the store and made an impulse buy.  Then I had to find a recipe of course.  Here’s what I ended up doing. Not only are these egg-free and delicious but also super easy and fast to make. You can have donuts in less than an hour, ready to enjoy. I tried freezing the finished donuts and defrosted at room temperature a week later – they were still good.

Ingredients

1 cup AP flour

1/2 cup sugar

2 t baking powder

1/2 t cinnamon and 1/2 t nutmeg (optional – omit for glazed donuts)

1/4 t salt

1/2 cup milk (or milk substitute)

2 T water

1 1/2 T melted butter or oil

1 t vanilla extract

Topping/Glaze: See options in recipe directions

Instructions

First, you need to get a donut baking pan.  Then, this is all you need to do to make 6 delicious donuts.

Preheat the oven to 350F

Oil, butter or use cooking spray on the donut pan.

Mix together the batter – do not overbeat:

1 cup AP flour

1/2 cup sugar

2 t baking powder

1/2 t cinnamon and 1/2 t nutmeg (optional – omit for glazed donuts)

1/4 t salt

1/2 cup milk (or milk substitute)

2 T water

1 1/2 T melted butter or oil

1 t vanilla extract

Spoon the batter into the donut pan, making sure not to overfill (stay below the middle ‘hole’ in the donut shape.  Bake 350F for 20 minutes or until a toothpick comes out clean. Remove from oven.

Allow the donuts to cool in the pan for 5-10 minutes before topping or glazing.

Topping/Glaze:

Powdered donuts:

Sprinkled with powdered sugar once the donuts are well cooled.

Cinnamon sugar:

Melt 1 T butter and lightly brush the top of each donut in the pan.

Dip carefully in a mixture of: 1/4 cup sugar and 1/4 t cinnamon to coat all sides.

Place on parchment to continue cooling & set.

Glaze:

Mix your favorite glaze icing – chocolate, honey, lemon etc.

Brush on the donut tops or dip donuts into the glaze.

Place on parchment or rack to cool and set
