Suz’s Amazing Minestrone Soup (GF)

I had a craving for minestrone soup one weekend, but didn’t have any prepared soup in the house.  So I decided to throw one together using whatever I had on hand.  How amazed was I to end up with the most delicious minestrone soup I’ve ever had!  I had to ration myself to make it last all week.  This is equally easy to make on the stove or in a slow cooker. If you try this, let me know how you like it!

Ingredients

2 T. oil
2 stalks of celery, sliced
1 small (1/2 large) onion, diced
1 clove garlic, diced
2 cups vegetable stock (packaged or commercial bouillion cubes – can use beef or chicken as well)
1 tin diced or stewed tomatoes
2 T. Italian, Greek or mixed herb seasoning
1 t. salt
1 t. pepper
1 tin (or 1 cup frozen) mixed vegetables (peas, carrots, green beans)
1 tin mixed red or pinto beans, BBQ flavour
1 cup uncooked macaroni or pasta shells (we use brown rice macaroni to avoid wheat) + 1 cup water

To Serve:
grated Italian cheese
crusty bread or rolls

Instructions

Heat a large sauce pan over medium heat, then add & saute 2-3 minutes:

Add to pot:
2 cups vegetable stock (packaged or commercial bouillion cubes – can use beef or chicken as well)
1 tin diced or stewed tomatoes
2 T. Italian, Greek or mixed herb seasoning
1 t. salt
1 t. pepper
1 tin (or 1 cup frozen) mixed vegetables (peas, carrots, green beans)
1 tin mixed red or pinto beans, BBQ flavour
1 cup uncooked macaroni or pasta shells (we use brown rice macaroni to avoid wheat) + 1 cup water

Stir well and bring to boil.  Reduce heat to simmer and cover.
Stir frequently to keep anything from sticking.
Simmer for 30-60 minutes until pasta is done and soup begins to thicken.
Adjust seasonings and liquid as required to your tastes.

To serve:
Sprinkle grated Italian cheese in the bottom of your bowl, and ladle hot soup over the cheese.
Serve with crusty bread or rolls for a delicious, hearty and healthy meal.

You may never buy prepared minestrone soup again – I know I won’t!
