Jen’s Easiest Rice Pudding (GF)

Easiest rice pudding ever.. (I took this from a recipe in TV Guide about 15 years ago..)
1/2 cup Arborio Rice
1/3 cup white sugar
4 cups HOMOGENIZED milk (important)
pinch of salt

In heavy pot add ingredients and stir until it comes to a boil.
Reduce heat to simmer (quite low) and cover. Stir occassionally (about every 10 minutes) and simmer for 45-50 minutes. Remove from heat, add 1 tsp vanilla.
Note: It will NOT look like its thick enough when you remove from the heat but it will continue to thicken when cooled. Don’t worry.
Add raisins if desired.
