Adnams’ Egg Nog

Eggnog is a problem when you’re lactose intolerant – but not if you make it yourself with lactose free milk!  It’s not that hard and you get a much better result than buying the commercial version.  Give this a try:

Heat but do not boil:
3 cups milk (regular or lactose reduced)
1/2 cup sugar

Mix together and whisk into milk:
2 beaten eggs
1 T. cornstarch
1/4 cup milk

Continue to heat through over low heat, stirring, for 3-5 minutes.

Remove from heat and stir in:
1 cup cold milk
1/2 t. vanilla
1 cinnamon stick
nutmeg/spices to taste

Chill before serving. 
To serve:
Version I:  pour into glass or mugs with optional whipped cream and sprinkle of nutmeg on top.
Version II:  Add a shot of rum or brandy to glass or mug, and fill with Eggnog – stir well.
