Suz’s GF Blueberry Muffins (GF)

Blueberry muffins are one of my favorite quick morning breakfasts when I don’t have much time. I like muffins that taste like muffins though, not cupcakes, so these are not super sweet. If you want something on the sweeter side, then you can increase the sugar to 1/4 C and sprinkle the tops with a pinch of sugar as well. Either way, enjoy the treat!

Ingredients

1/2 C GF flour mix (such as Bob’s Red Mill 1:1 flour mix)

1/2 C ground oatmeal or oat flour (if tolerated) OR 1/2 C almond flour

1/8 C (= 2 T) sugar

1/2 t baking powder

1 egg (or egg substitute)

2 T melted butter (cooled to room temperature)

1/2 C milk (or milk alternative such as almond or soy milk)

1/2 C fresh or frozen blueberries (or other fresh, frozen or dried fruits)

Instructions

Preheat oven to 350F.  Line muffin time with 6 parchment muffin papers.

Mix dry ingredients (except fruit) together in mixing bowl.

Combine egg, milk and melted butter. Stir into the flour mixture well. Fold in fruit.

Spoon into 6 muffin papers.

Bake 350F for 20-25 minutes. Remove from oven and let cool before removing from muffin tin.
